The Chicago Tribune recently posted an article asking chefs what restaurant they really want to go to and what restaurant did they really want to go to, but it closed before they could get there. I was lucky enough to be interviewed for this article(seen below).
You can read my response to both questions below, but more importantly, what are your answers to these questions? They really are important questions to ask yourself. What restaurant do you REALLY want to go to? What restaurant was on your list of places to check out, but then for whatever reason, it closed?
The real issue here is: if you have an interest in heading to a restaurant, GO. Don't wait. Don't make excuses. Simply GO.
